餐饮业是城市商业中的重要一类,餐饮服务中心的规模大小、服务范围及分布规律符合中心地理论。随着移动互联网平台不断涌现,距离的影响不断减弱,中心地理论在此背景下的适用性受到质疑。文章以杭州为例,通过网络获取 2020 年至 2023 年线上、线下餐饮服务设施的时空序列数据,采用基于密度的中心计算方法识别不同级别的线上、线下餐饮中心,并观察中心数量、中心密度、腹地范围的变化,探究其分布演化规律,发现线下餐饮中心由“多中心”向“双中心”演化,中心的密度、腹地范围差异扩大,形成更突出的“核心—边缘”空间结构,具有更强的中心性;而线上餐饮中心则由多中心的空间结构向均匀的中心网络演化,其中心的层级性不断减弱,中心之间的腹地范围、密度差异逐步缩小。构建线上、线下餐饮中心的空间指标后,发现二者逐渐从空间高度耦合向空间分离演化。最后,通过对分布图示规律验证发现其均未遵循“市场原则”“交通原则”“行政原则”,文章提出符合线上餐饮中心分布规律的“均匀化”的原则,综合得出线下餐饮中心的分布依旧遵循中心地理论的规律,而线上餐饮中心则出现“去中心化”的特征。 - 关键词:
移动互联网;餐饮中心;中心地理论;杭州;核心—边缘 - Abstract: The catering industry is a key sector within urban commerce. The scale, service scope, and distribution of dining service centers traditionally conform to central place theory. With the continuous emergence of mobile internet platforms, the influence of distance has been weakening, and the applicability of central place theory in this context has been called into question. This study examines the spatial evolution of online and offline dining service centers in Hangzhou from 2020 to 2023, using spatiotemporal data collected from online platforms and offline sources. By applying a density-based centrality calculation method, different levels of dining centers were identified, and changes in the number, density, and hinterland range were analyzed. The findings indicate that offline dining centers have evolved from a polycentric structure to a dual-core pattern, exhibiting a more pronounced “core-periphery” spatial structure with stronger centrality. In contrast, online dining centers have transitioned from a polycentric structure to a more uniform network, with decreasing hierarchical differentiation and diminishing differences in hinterland range and density. Further analysis of spatial indicators reveals that the spatial relationship between online and offline centers has shifted from high coupling to spatial decoupling. Additionally, distribution patterns indicate that neither follows the “market principle,” “transportation principle”, nor “administrative principle”. Instead, a “centrality equalization principle” is proposed for online dining centers. Overall, while offline dining centers continue to align with Central Place Theory, online dining centers exhibit a trend of decentralization.
